Glowing embers redden amid the huge blue-tiled dome, and the contrast sets the tone for a dinner at Mürver, as the speciality of the restaurant is wood-fired cuisine. Everything is therefore braised, smoked, seared or slowly cooked for hours. Even though the menu is meat-oriented, everybody can get their share: steak, octopus, squid, vegetables... every ingredient (and most are produced in Anatolia) will be put to the fire test. Mimic regular customers and order a braised quail with spicy pumpkin and beetroot mash, or slow-cooked Thracian lamb served with apricot purée, salted yogurt and firik, a typical kind of wheat from Turkey. As the skies darkened and the sun goes down, choose among great Turkish wines and settle in one of the Ottoman-style armchairs of the patio. It overlooks the Topkapi Palace, so you will be able to enjoy an amazingly unobstructed view over the Bosporus.
