Inside, you will feel right at home. The chef champions food that showcases classic cooking, using ingredients either from local markets, or local suppliers with whom he has a very close relationship. This freshness is palpable as soon as you taste the salmon gravlax and wasabi whipped cream, poached rhubarb and fried red onions, or duck breast with blackcurrant sauce, garlicky beetroot emulsion and pan-fried shiitake mushrooms. It goes without saying that the menu is constantly changing to reflect what is available and in season, but you can be sure that you will always find something on there to whet your appetite, be it meat or vegetables.
