Behind his pharmacy-looking counter, Clément Emery works his magic on the shaker. The mixologist avoids the usual mojitos and cosmos in favour of totally unique cocktails. It has to be said that, at Shangri-La's Bar Botaniste near the Trocadéro gardens, the drink menu of about 15 references is essentially herb-based. It is a reference to Roland Bonaparte, the hotel's former owner and great-nephew of Napoleon, who established the largest herbarium of all Europe – 100,000 different species for 250,000 specimens!
Clément Emery experiments with plants and reintroduces a few aromatic alcohols like absinth and génépi. Le Bloom is spritz revisited with champagne, homemade amaro and a mix of twenty plants; the Agua Ardiente harks back to Latin America with spicy tequila, purple corn, chipotle (dried and smoked jalapeño pepper) liquor, lime juice and tonic. A different look at the world of botany!
